        Keystone "Certified Sweet®" Onions

Here in the Keystone Kitchen, certified sweet® onions are the only onions you will find! Keystone "Certified Sweet®" Onions are comprised mainly of, Vidalia Sweet Onions from the great state of Georgia, Walla Walla Sweet Onions from the majestic state of Washington and Mayan Sweet Onions from our South American neighbor, Peru. So how do all of these onions, from all of these growing regions become Keystone Certified Sweet® Onions? The short answer is an exceptional growing network, a third-party certification process, dedicated management from the field to you, but most of all, it takes great soil to grow a great onion. In Georgia, Vidalia's are grown in a selected region of the state with a mild climate and a sandy loam soil. The Walla Walla's in Washington are grown in a mild climate but benefit from the rich volcanic soil in the region. Mayan sweet onions grow in a unique combination of rich soils with low sulfuric acid content and a dry climate, which is created by the Pacific coastal deserts in Central and South America

As you can see, geographic locations and climate conditions create growing seasons. From September to March Mayan Sweet Onions are available, Vidalia Sweet Onions start in April and end in September and Walla Walla Sweet Onions go from June through August. Because of this combination of growing seasons, Keystone Certified Sweet® Onions are available year-round for you and your family. Now, how do you know these onions are really sweet? Well, a third-party testing lab maps the onion fields, selects the onions in random samples and then performs lab tests for pungency. They're testing for the level of "pyruvic acid", so, a high level is a hot onion and a low level onion tastes sweet. Thus, the Keystone Certified Sweet® Onion! Keystone products are tagged appropriately with a pungency tested seal and a certified sweet® seal.
