        SHRIMP MARTINI

 Ingredients:
1 Keystone “Certified Sweet®” Onion, diced
1 jalapeno, seeded, diced
1 garlic clove, diced
2 tomatoes, diced
1/2c kalamata olives
1/2c cilantro, chopped
juice and zest of 2 limes
1 lb. 21/25ct. shrimp
4T extra virgin olive oil
s/p to taste

Preparation: In pan add 2T oil,cook shrimp 1 minute on each side; remove from pan add salt and pepper. To pan add lime juice and zest to deglaze; pour over shrimp. Add sweet onion, jalapeno, garlic and 2T oil to shrimp. Cover and marinade 30 minutes. Add tomatoes, olives and cilantro. Cover and chill, Serve in martini glass with lime slice garnish.
