        Sweet Onion and Salmon W/ Horseradish Cream Sauce

 Ingredients:
2 Keystone “Certified Sweet®” Onions, large dice
6T extra virgin olive oil
1c white wine
2c heavy cream
3T horseradish
10oz. orrechette pasta or pasta of your choice
24oz. salmon fillet
1/4c parmesan cheese
1/4c fresh parsley, chopped

Preparation: Cook pasta; keep warm. In oil, saute onion 5-7 minutes; remove and keep warm. Deglaze pan with white wine, add cream and reduce by half; add horseradish, pasta and onion to warm through. Salmon can be poached or grilled then flaked for plating.

Plating: place pasta and onions on plate; top with salmon and sauce. Garnish with parmesan cheese and parsley.
