        Grilled Sweet Onion and Tomato Salad

 Ingredients:
2 Keystone “Certified Sweet®” Onions, halved, slab cut
3T extra virgin olive oil divided
1pt. grape tomatoes, halved
12 basil leaves, cut into match-like strips
3T balsamic vinegar
1/2c parmesan cheese
s/p to taste

Preparation: Brush onion slabs with oil and salt and pepper on both sides. Grill turning once, 10-12 minutes until just tender. Remove to cutting board and cut into large dice. In bowl, combine tomatoes, onions, vinegar, oil and basil. Garnish with cheese.
