Sweet Onion and Cucumber Salad
Description: Keystone “Certified Sweet®” Onions and cucumbers with a new flavor twist that's sure to please.
Ingredients:
3 Keystone “Certified Sweet®” Onions, Sliced
3 Cucumbers, Peeled and Sliced
1 Jalapeno, Seeded and Sliced
1/2 Cup Cilantro
1/2 Cup Basil
1T Cajun Spice Mix
Juice of 2 Limes
1T Extra Virgin Olive Oil
3T Red Wine Vinegar
1 Clove Garlic, Minced
Hot Sauce to Taste
Salt/Pepper to Taste
Preparation: In a bowl combine spice mix, vinegar, oil, hot sauce ,lime juice, garlic, salt/pepper then whisk. Add onions, cucumbers, jalapenos, basil and cilantro then toss. Yield: 8 servings
