        White Bean Salad

 Ingredients:
2 14oz. Cans Cannellini Beans
2 Sweet Onions, diced
1 Red Bell Pepper, diced
1/2C Cilantro, chopped
1/2C Parsley, chopped
Juice of 2 Lemons
Juice of 2 Limes
1t Cumin, more if desired
1/2C Blue Cheese, crumbled
S/P to taste

Preparation: Combine all ingredients and mix well. Serve on large platte. Serves 8 or more.
