        Open Face Cajun Vegetable Sandwich

 Description: Keystone “Certified Sweet®” Onions with portobella mushrooms celery, green pepper and tarragon say New Orleans.  

 Ingredients:
2 6" Hoagie Rolls Split Lengthwise (enough for 4 sandwiches)
2 Sweet Onions, Sliced
2 Celery Stalkes, Chopped
1 Green Bell Pepper, Sliced
2 Cloves Garlic, Minced
2 Jalapeno Pepper, Chopped and Seeded
8 oz, Portobella Mushrooms
1/2 Cup Tarragon
1 -2 T Cajun Spice Mix
1/3 Cup Mayonaise
2 T Extra Virgin Olive Oil
Hot Sauce to Taste
3 Cup Cheddar Cheese Sauce, Optional

Preparation: Sauté onions, mushrooms, celery, green pepper, spice mix and garlic until tender. Place toasted roll in center of plate and top with mayonaise, warm vegetables; garnish with tarragon, jalapeno pepper, hot sauce and warm cheese sauce.
