        Open Face Fish Sandwich

 Description: Keystone “Certified Sweet®” Onions and fish are featured with dill tartar sauce in this open face delight.  

 Ingredients:
4 Slices Multi-grain Bread, Toasted
4 Fish Portions, 4-5 oz.
2 Keystone “Certified Sweet®” Onions, 1/4 Inch Slab-cut
4 T Dill Tartar Sauce
4 T Butter, Melted
1/2 Cup Fresh Parsley, Chopped

Preparation: Grill onion slabs until tender. Fish can be fried, sautéed, baked or broiled. Place bread in center of plate and spread with tartar sauce, place 2 slabs of onion overlapped on bread, add the fish portion then drizzle with warm butter and sprinkle with fresh chopped parsley. NOTE: When grilling the sweet onion brush both sides with extra virgin olive oil and add salt/pepper.
