        Open Face Greek Chicken Sandwich

 Description: Keystone “Certified Sweet®” Onions chicken, black olives, feta cheese and tomato...classic flavor at its best.  

 Ingredients:
4 Slices French Bread, Sliced on Bias
4 Boneless Chicken Breast
2 Keystone “Certified Sweet®” Onions, Sliced
8 oz. Greek Dressing
1 T Oregano, Dried
1 Tomato, Sliced
1/2 Cup Black Olives, Chopped
1/2 Cup Fresh Parsley
4 oz. Feta Cheese
1 Clove Garlic, Minced
2 T Extra Virgin Olive Oil
Juice of One Lemon

Preparation: Toast bread. Marinade chicken in 6 oz, of Greek dressing and 1/2 T oregano and garlic. Sauté onions until caramelized; grill chicken and begin assembly. Place bread in center of plate then stack chicken, onions, olives, tomato and feta cheese. Garnish with a splash of dressing, parsley lemon juice and a sprinkle of oregano.
