Asparagus Soup
Ingredients:
2 lbs. Asparagus Green or White(peel if white), cut into 1” pieces
1 Sweet Onion, large dice
4oz. Butter
3C Chicken Stock
1C Water
1/2Pt. Heavy Cream
S/P, to taste
Preparation: In small pot, add butter and sweet onion; cook until translucent. Add asparagus and cook 3-4 minutes. Add stock, season with salt and pepper; simmer until tender. Transfer to blender or food processor; puree to smooth adding cream at end of blending. Pass through fine strainer and serve.
