Golden Yukon Potatoes with Sweet Onions
Description: Keystone “Certified Sweet®” Onions sautéed with baby Yukon Gold potatoes are splashed with red wine vinegar and topped with fresh rosemary and thyme.
Ingredients:
3 Keystone “Certified Sweet®” Onions, Sliced
1lbs. Yukon Gold Potatoes, Sliced
4T Extra Virgin Olive Oil
2T Red Wine Vinegar
3T Rosemary
2 Cloves Garlic, Minced
2T Thyme
Salt/Pepper to Taste
Preparation: Boil potatoes to al dente; cool and halve. In pan, sauté onions, garlic and potatoes. When cooked, sprinkle with vinegar, salt, pepper and fresh herbs and then toss.
