White Asparagus With Tarragon Cream Sauce
Ingredients:
1 lbs. White Asparagus, peeled
1 Shallot, minced
2T Butter
3oz. Fresh Mushrooms
1t Lemon Juice
1 Clove Garlic, minced
2T Flour
2/3C Vegetable or Chicken
1/3C Heavy Cream
1T Tarragon, dried
1/8T Nutmeg
S/P, to taste
Preparation: Grill or roast asparagus. In skillet on medium-high add butter, shallot, mushrooms and lemon juice. Saute until tender. Add tarragon and flour, stirring for 1 minute; add stock and bring to boil, reduce heat and add cream; cook 2-3 minutes. On platter arrange asparagus and top with sauce.
