1/3C Extra Virgin Olive Oil
1 Sweet Onion, sliced
1# Fresh Green Beans
1-2 Potatoes, sliced 1/4″ thick
3 Tomatoes, chopped
1 Clove Garlic, chopped
1t Sugar
1/4C Fresh Parsley, chopped
1/4C Fresh Mint
S/P, to taste


Heat oil, add onion and garlic; cook 5 minutes and add tomatoes. Par-boil beans and potatoes to just tender; drain and add to onions, cook 10 minutes. Remove from heat, add fresh herbs along with salt and pepper to taste.
