Sweet Onions & Artichoke Hearts
Ingredients
3C Baby Greens3C Spinach2 Sweet Onions, sliced6-8 Artichoke Hearts, large1/2C Grape Tomatoes1/2C Kalamata OlivesS/P, to tasteGrated Romano Cheese
Basil Vinagrette4oz. Apple Cider Vinegar6oz. Extra Virgin Olive Oil2 Cloves Garlic, minced2T Dried Basil1T Dijon Mustard2T Granulated Sugar, more or less to tasteS/P, to taste
Preparation
Combine in a jar and shake. Marinade artichokes in 1/3C of dressing for 1 hour. Plate your salad and enjoy.
